🍆Baingan Ka Bharta: A Flavorful Indian Eggplant Recipe💫

Baingan ka bharta is a popular Indian dish made from roasted eggplant, flavored with aromatic spices and fresh herbs. It's a delicious and comforting dish that pairs perfectly with rice or roti. Ingredients:

  • 2 eggplant (baingan)


💥 1/2 cup green peas

💥 1 onion, finely chopped
💥 3 small tomatoes, finely chopped
💥 4 green chilies, chopped (adjust to taste)
💥 ginger-garlic


💥 1 teaspoon cumin seeds
💥 1 teaspoon turmeric powder
💥 1 teaspoon red chili powder (adjust to taste)
💥 1 teaspoon dried mango powder
💥 Salt to taste


💥 2 tablespoons oil for cooking
💥 Fresh coriander leaves for garnish

🍆 Pierce the eggplant with a fork in a
few places.
🍆 Roast the eggplant over an open flame or on a grill until the skin is charred and the flesh is soft.

🍆 Once roasted, let the eggplant cool slightly, then peel off the charred skin and mash the flesh with a fork. Set aside.

🍆 Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

🍆 Stir in the ginger-garlic paste and chopped green chilies. Cook for 2-3 minutes until the raw aroma disappears.

🍆 Add chopped onions and saute until they turn golden brown.

🍆 Add the chopped tomatoes and cook until they soften .


🍆 Add turmeric powder and red chilli powder and mix well.

🍆 Add green peas and cook until peas are tender."

🍆 Add the mashed eggplant to the pan and mix well with the masala.

🍆 Season with amchoor powder and salt. Stir to combine all the ingredients thoroughly.

🍆 Let the bharta simmer for 5-10 minutes, allowing the flavors to meld together.

🍆 Garnish with freshly chopped coriander leaves before serving.
