Hello friends, how are you all? I hope you are all doing well. Today, I am sharing a recipe for mixed vegetable parathas with you.

It's a great food item for breakfast. It's a common dilemma in every household about what to make for breakfast every day. It's not always possible to cook delicious dishes daily. It's also essential for breakfast to be both delicious and beneficial for health. If you also face this kind of dilemma, then today I am going to tell you the recipe for making the best and healthy mixed vegetable parathas. Mixed vegetable parathas can be enjoyed not only for breakfast but also for lunch or dinner. If you are fond of parathas, then this food dish is perfect for you.

To make this dish, you'll need the following ingredients:

  1. 250 grams cauliflower
  2. 100 grams carrots
  3. Approximately 100 grams onions
  4. 4-5 green chilies (adjust to taste)
  5. Fresh coriander leaves
  6. Whole wheat flour
  7. Salt to taste

Instructions:

  1. Begin by kneading the dough. Take one cup of wheat flour and one cup of semolina (suji), add carom seeds (ajwain), salt, and mix well. Knead it into a smooth dough and set it aside.

  1. Finely chop the cauliflower, carrots, and onions.

  1. Mix the chopped vegetables in a bowl, add salt, and let it sit for a while. The salt will draw out moisture from the vegetables.

  1. After some time, squeeze out the excess water from the vegetables mixture and discard it.

  1. Add chopped green chilies and coriander leaves to the vegetable mixture.

  2. Divide the dough into small portions and roll them into balls. Flatten each ball and stuff it with the vegetable mixture. Close the edges and roll it into a smooth ball again.

  1. Heat a griddle or skillet and cook the stuffed paratha on both sides until golden brown, using some oil or ghee.

  1. Serve the hot mixed vegetable paratha with tomato ketchup or yogurt.
