A Monster with Dodge has an increased (+25%) chance of evading Melee or Ranged attacks.
It is wasteful to use a monster with Dodge in Aim True, the ruleset in which every attack hits its target.
A fast monster with Flying and Dodge will be very hard to hit by Melee and Ranged attacks.
