I definitely think going for gold cards is better in many ways. One of them is potential future value, obviously. And the dec bonuses for every win.

One reason you maybe haven't thought of, though briefly touching it, is for guild brawls. Soon there will be Chaos Legion Gold Foil only-frays. You'll have a huge advantage in those and will be a very valuable player to you guild. Regardless of when they arrive, I highly recommend you participate in brawls asap, to earn Merits for the soul-bound Gladiator cards.

I also like keeping some cards at level 1 speed for the reverse speed rule sets.

You could actually keep the regular foils that you want at level 1 and upgrade your gfs as you please. In battle selection there is a button very easy to miss, that lets you choose between regular foils or gold foils
