Poha (flattened Rice)

Poha, also known as flattened rice, is a popular and quick breakfast option in India. It's a light and fluffy dish typically cooked with spices, vegetables, and seasonings. It's often garnished with coriander leaves and lemon juice. Poha is not only delicious but also easy to prepare, making it a favorite choice for a quick and wholesome breakfast.

It's a nutritious dish that's easy to prepare. Here's a simple Poha recipe :-

#Ingredients:

2 cups of Poha

2 tablespoons of vegetable oil

1 teaspoon of mustard seeds

1/2 cup peanuts

1/2 cup of finely chopped onions

1/2 cup diced potato

2-3 green chilies, finely chopped

1/2 teaspoon of turmeric powder

Salt to taste

Juice of lemon

Fresh coriander leaves for garnish

Grated coconut for garnish (optional)

#Instructions:

Start by rinsing the Poha under running water for a minute or two until they become soft. Be careful not to over-soak, as Poha can become mushy. Set aside.

Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.

Add finely chopped onions, green chilies, and curry leaves. Saute until the onions turn translucent.

Add turmeric powder and salt. Mix well.

Add the rinsed Poha to the pan. Gently toss everything together. Be careful not to break the Poha. Cook for 4-5 minutes until heated through.

Add peanuts and potato diced.

Squeeze the lemon juice over the Poha and mix well. Adjust salt and spice levels to your taste.

Garnish with fresh coriander leaves and grated coconut (if using).

Serve hot and enjoy.
