I just opened my first woopartsun pack and I don't really understand it.
Does this mean this part is not eligable for an airdrop because it has only 2 stars at best or does my NFT have 5 stars for the total amount ?

Its a five star. You can in maximum have 3 stars per category.
5 stars total :)
min per land plot is 3 x 1 star, max is 3 x 3 star
The lowest total star rating you can get is a 1,1,1 and the max you can get is a 3,3,3
You got a 1,2,2 which is a 5-star land.
